It’s no surprise that many of us have gained a few pounds over lock-down. Sat at home, working from home, watching Netflix or just stuck in a cramped house with nowhere to go, is a recipe for disaster.

I reduced my meals to 2 a day +snacks, to try and combat the threat of piling on the pounds but my new found addiction to hazelnut chocolate bars (they are sooo good); means I have long given up on getting into my skinny jeans.

This week I changed my diet. I opted for less pasta and more leafy greens and tossed together a light, filling and healthy salad which I just love. With a mix of fruit and salmon, this is not only nutritious, it’s also great for my skin. For those who have gone vegan or who prefer meat, the salmon can be subbed” for a protein of your choice.

Spicy Green Salad

Basic ingredients;

1 bag of washed rocket, watercress and spinach leaves or as much as you fancy.

1/2 a freshly squeezed lemon

25-30 grams of shredded smoked salmon

1 small bowl (or 1 hand full of seedless red grapes)

1 thick slice of feta cheese crumbled over the leafy greens. (Not feta style for nutritional reasons)

2 small sliced chestnut mushrooms

1/2 a sliced red pepper

1 teaspoon of olive oil with white truffle oil extracts

A pinch of salt

A sprinkle of cayenne pepper
