If you are one of the zillions of people who promised to loose weight on January 1st, you might already have quit that new years resolution? I decided for the first time this year, not to commit, take the pressure off and instead focus on just eating better.
Salads are a great way to eat healthily but it can be nicer to mix a little cooked elements into yours, to give your salad a bit more depth.
I have created a tasty, healthy, green rocket salad, which is high in vitamins A, C and K, as well as being great for boosting your eyesight, skin, bones and promoting a healthy heart.
The salad also contains fresh organic eggs, which are high in protein, vitamins B2, B6, B12, selenium, vitamin D, iron, copper and zinc.
The benefit of this is that it’s actually filling and fresh and you won’t even feel like you’re cutting back the calories, once you have finished eating!
Ingredients;
1 large handful of wild rocket salad £0.16p
2 Soft boiled free range Happy eggs £0.50p (Cooked in boiling water for 6 minutes)
3 Large vitamin D rich, chestnut mushrooms £0.27p (Lightly fried with olive oil)
1 tablespoon of coleslaw £0.16p (shop bought but you can make your own)
Dressing;
1/4 of a lime (£0.07p) squeezed over the rocket for added freshness.
1 pinch of salt
1 pinch of coarse black pepper
These ingredients are enough to feeds 1 person for Approx £1.16.
